
No-bake cottage cheese cheesecake
Description
Perfectly pairs with tea and coffee. This simple and delicious dessert is ideal for any celebration. Cheesecake can be made with fruits, berries, with a shortcrust or sponge base, or even without a base. Cottage cheese can be substituted with cream cheese or "Philadelphia," "Mascarpone" cheese. I'm sharing my version of a no-bake blueberry cottage cheese cheesecake. I assure you, it turns out very tasty. Serve cooled or slightly warm.

Bring the water to a boil, pour it into the bowl with gelatin, and stir until the gelatin is completely dissolved. Cool at room temperature.

Crumble the crackers and mix with melted butter.

Place the baked mixture into a baking dish, press down with your hands, and refrigerate.

Transfer the cottage cheese to a bowl, add granulated sugar (1/4 cup). Beat at medium speed, gradually pouring in the jelly.

Pour the resulting mixture into a pie crust, cover with plastic wrap, and refrigerate for several hours, or preferably overnight.

In a saucepan, mix the remaining sugar, starch, and ¼ cup of water, and place over heat.

Place the blueberries in a saucepan and cook the mixture for 2-4 minutes, then add lemon juice.

Cool the mixture and blend everything in a blender. Remove the cheesecake from the refrigerator, pour the prepared blueberry mixture over it, decorate with whole berries, and return to the refrigerator.
