Cottage cheese pies

Description

The classic recipe for syrniki (cottage cheese pancakes) usually calls for them to look like a sandwich, with two layers of dough slightly overlapping each other and the filling visible in the middle. But whether my hands aren't particularly skillful or the dough turned out too thin—I don't know—mine kept sliding off the cottage cheese. So I had to pinch the edges together and bake them seam-side down. As a result, they turned out looking like closed buns with thick bottoms. But you and I know they're syrniki. The baking is done. Serve them at the table.

    1. In a bowl, mix egg whites (I couldn't separate them properly, and one yolk ended up in the dough, but that's not a problem), cottage cheese, 50 grams of sugar, 2 tbsp sour cream, 1 tbsp vanilla, and 2 tbsp semolina. Mix this filling and let it sit for a while so the semolina can swell.

    2. Meanwhile, let's prepare the dough: first, rub the egg yolks with sugar, then add melted butter, sour cream, and flour. Knead the dough until smooth, then shape it into equal-sized flatbreads. Place the cottage cheese filling in the center of each, then seal the edges. I personally enjoy making syrniki in various shapes at the same time, so feel free to experiment.
