
Cottage cheese crescents with cherries
Description
Cottage cheese crescents are homemade baked goods made from cottage cheese. They always turn out delicious and pair wonderfully with a cherry filling. Right after baking, the cottage cheese crescents are tender beyond belief—they have a porous, soft crumb like yeast dough. When the crescents have cooled completely, they remain just as soft and tender inside, while the outside develops a light, crispy crust. It’s very simple and delicious! Prepare all the ingredients needed to make cherry crescents.

Let’s start by preparing the cherry filling. Put the frozen cherries (without thawing) into a saucepan, add the sugar, and place over low heat. Cook until the cherries thaw.

Dilute corn starch in cold water.

Pour the starch water into the cherries and cook until boiling. The mixture will begin to thicken—that means the filling is ready. Cover the cherry filling with plastic wrap and place it somewhere cold so it can cool.

While the filling is cooling, let's prepare the dough. Place the cottage cheese, salt, sugar, and softened butter into a bowl. Mix the mass thoroughly.

Add flour and baking powder. Set aside 10–15 g of flour.

Knead soft dough. Wrap it in plastic wrap and refrigerate for 15–30 minutes.

Take the dough out of the refrigerator and divide it into 2–3 portions. Roll each piece into a rope. Use the reserved flour for rolling.

Roll out the rope into a rectangle.

Lay the cherry filling in a line roughly along the middle of the rectangle.

Join the edges and pinch them closed. You can seal the edges using a fork or a scraper.

Cut the finished roll into small rolls about 3–4 cm wide. Transfer all the pieces to a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for 20–25 minutes.

Take out the golden-brown rolls and let them cool. Transfer to a serving dish and dust with powdered sugar.
