You can also make crescents with a filling—use very thick jam for this. Serve with tea or coffee.

For these rolls, it's best to use fatty and not runny cottage cheese. Mash the cottage cheese with a fork. And if there are people in your family who don't like cottage cheese, it's better to press it through a sieve so that the cottage cheese crumbs are barely noticeable in the dough.

Add soft butter to the cottage cheese and mix everything into a homogeneous mass.

Extinguish the soda with vinegar, add it to the cottage cheese with butter and mix. Then add flour and salt, and knead the dough. It should not stick to your hands; if necessary, add a little more flour.

Roll the dough into a ball and refrigerate for at least an hour. If needed, this dough can be prepared the night before and stored in the refrigerator for up to 24 hours, then used to bake rolls the next day.

While the dough rests in the refrigerator, let's prepare the nuts. If they are unshelled, we'll shell them, then chop them finely either with a blender or a rolling pin.

Then mix the chopped nuts with sugar.

Take the dough out of the refrigerator and divide it into 4 parts.

Sprinkle the table or board with part of the nut-sugar mixture and roll out one portion of the dough into a round flatbread. Then sprinkle more nuts and sugar, flip the flatbread over, and roll it out again. As a result, you'll have a 3-4 mm thick flatbread covered with nuts and sugar on both sides.

Cut our flatbread into 8 pieces. Roll each piece into a croissant shape.

Line the baking sheet with parchment paper or lightly grease it with oil, then place the croissants on it. The croissants will slightly increase in size during baking, so do not place them too close to each other.

Bake the croissants in a preheated oven at 180 degrees for about 20–25 minutes. Ready croissants will have a beautiful golden color. When serving, you can sprinkle the croissants with powdered sugar.
