
Cottage cheese pancakes
Description
The recipe won't take much time. Serve tender cottage cheese pancakes with maple syrup, honey, or plain yogurt. The baked goods are ready. Serve at the table.

1. Finely chop the walnuts if you are using them. Lightly grease a non-stick skillet with butter or cooking spray and heat over medium heat. Preheat the oven to 95°C if you don't plan to serve the pancakes hot directly from the skillet. Mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt together in a large bowl. In a separate bowl, whisk together milk, cottage cheese, butter, egg yolks, and vanilla extract.

2. Pour the cottage cheese mixture into the dry ingredients and lightly beat together until smooth. Add walnuts and/or blackcurrants, if using. In a separate bowl, beat 2 egg whites and fold them into the batter. The batter will be thick.

3. Using a spoon, place the batter onto the skillet, forming round pancakes and using 1/3 cup of batter for each. Fry until bubbles appear on the surface and the edges become dry. Flip and cook the other side until light brown.

4. Place the prepared pancakes in a preheated oven and keep warm until serving. Serve the pancakes with maple syrup, honey, or plain yogurt.
