
Classic cottage cheese muffins
Description
The baking is simple and quick. I often use silicone molds for baking muffins—they don't need to be greased. Just fill them with batter and put in the oven. The baked muffin won't stick and comes out easily. It's advisable to grease any other molds with baking fat, margarine, or vegetable oil. Good luck! Serve with tea or coffee.

Prepare the ingredients for the muffins. Measure out the exact amounts of sugar, flour, and cottage cheese. It's better to use chilled butter, but room temperature butter will also work.

Take a convenient deep container. Rub the butter into the sugar with a mixer. Then add the cottage cheese and continue mixing the ingredients with the mixer.

Without stopping the mixer, add the eggs one at a time, incorporating each into the batter.

Add the sifted flour, previously mixed with baking powder for even distribution in the dough. Use a mixer to combine the cheese mixture with the flour.

You should end up with a smooth, elastic, and moderately thick dough.

Fill the muffin tins two-thirds full with batter. You can line them with paper muffin liners for appearance and convenience. Bake the muffins in a preheated oven at 175-180 degrees Celsius for 25-30 minutes. Keep an eye on their doneness.
