
Cheese eclairs
Description
The pastry is simple and quick to prepare. Here is an easy and affordable recipe for cottage cheese eclairs. For the dough, I used: flour, water, eggs, salt, and butter. For the filling: condensed milk, cottage cheese, and sour cream. In this recipe, butter can easily be replaced with margarine (melted to room temperature). Have a wonderful day! In a saucepan, bring water, salt, and butter to a boil.

Add flour a little at a time, stirring constantly. When the dough forms a ball and pulls away from the sides of the pot, remove it from the heat.

Let the dough cool slightly. Then, add the eggs one at a time, mixing thoroughly with a mixer until a smooth, thick mixture forms.

Line a baking sheet with parchment paper. Using a pastry bag, pipe the eclairs onto the baking sheet. Bake the dough in the oven at 200°C (392°F) for 45-50 minutes, until golden brown.

While the eclairs are baking, prepare the filling. In one container, mix cottage cheese, condensed milk, and sour cream.
