
Cottage cheese buns with kefir
Description
Homemade pastries for tea. The bun dough is quite sticky, but you shouldn’t overwork it with extra flour—or the buns will end up heavy and tough. Dip your hands in water and shape the rolls. You can bake them in molds or simply arrange them on a baking sheet—it’s up to you. Serve with tea or coffee.

Prepare the necessary ingredients.

In a bowl, combine cottage cheese, 1 egg, sugar, and vanilla to taste. Blend with an immersion blender until smooth.

Pour warm kefir into the resulting mixture. Blend again with a blender.

Add flour and baking powder.

Start the mix with a spoon. While mixing the dough, pour in the vegetable oil.

When the dough becomes hard to stir with a spoon, oil your hands with vegetable oil and knead with your hands. If the dough sticks a lot, add a couple tablespoons of flour. The finished dough should be soft—not packed with flour—and light. When you divide it into portions, it will be slightly sticky.

In a small bowl, mix together 1 egg and 1 tablespoon of sugar.

You can bake the buns either in molds or on a baking sheet. I chose the first option. For that, generously grease the molds with butter. Divide the dough into equal pieces. So the dough won’t stick to your hands too much, wet your hands with water.

Arrange the prepared portions in moulds (or tins). Brush the tops with beaten egg mixed with sugar. Bake in an oven preheated to 180°C for 20 minutes.

Check the buns for doneness with a wooden skewer; it should come out dry. Remove from the oven, leave in the pan for 10 minutes, then take out and transfer to cool.

Serve the buns warm or fully cooled alongside your favourite drinks.
