
Cottage cheese dough with kefir

Place the cottage cheese into a large bowl of a mixer or food processor. It must be of good quality and fat content, as the final result depends on this ingredient. Add the butter (at room temperature) and sugar to the same bowl.

Mix the dough using a K-shaped attachment. Add raw chicken eggs to the bowl one at a time, continue mixing at a low speed.

Now it's time for the kefir. Pour it into the other ingredients—you can add it all at once. Then continue kneading the future dough until the mixture becomes completely smooth and uniform.

Sift the flour to aerate it. Then mix it with baking soda. There's no need to activate the baking soda, as the kefir contains the necessary acid. Add the flour and baking soda mixture to the dough in portions of five tablespoons. Switch to the dough hook attachment and knead until completely smooth.

At the end of preparation, add vanilla essence or a vanilla pod. The finished dough should be elastic and slightly sticky to the hands. Transfer the dough to any convenient container and place it in the freezer (or you can use it immediately for preparation).
