Cottage cheese dough for cherry dumplings

Description

The dish is easy to prepare without unnecessary complications. It's best to cook cheese-based dumplings in a steamer, as they turn out very fluffy, tender, and soft. However, you can also boil them like regular dumplings—no problem at all! To make the cheese dough for cherry dumplings, I recommend using cottage cheese with at least 5% fat content, or even richer if available. The baking soda will make the dough fluffy and airy. I personally love drizzling the finished dumplings with melted butter. 1. First, mash the cottage cheese together with eggs and sugar. I usually do this with a fork or spoon, but a blender works too. 2. Then add the baking soda and gradually sift in the flour. The dough should become soft and smooth. You might need less flour depending on the moisture of the cottage cheese. 3. Roll out the prepared dough. Keep in mind that cheese-based dough shouldn't be rolled as thin as regular dumpling dough, as it may tear later. 4. Use a glass to cut out circles (this amount of ingredients yields about 20 dumplings). 5. Place the filling in the center with a spoon and seal the dumplings. Optionally, you can add some sugar to the filling. 6. Place the dumplings in the steamer, leaving space between them. They will expand during cooking, so sufficient space prevents them from sticking together. 7. Steam the dumplings for 6 minutes (after the water in the reservoir comes to a boil). Serve the ready cheese-based cherry dumplings with sour cream or melted butter. By the way, you can also try making these dumplings with strawberries. The dish is now ready to be served.
