Description
Perfectly pairs with tea and coffee. The most important thing in this recipe is not to over-dry the cookies in the oven. Watch them carefully. As soon as the edges begin to turn brown, immediately remove the cookies from the oven. This way, you'll get cookies with a crispy crust and a soft center. Serve with tea or coffee.

Take the butter out of the refrigerator and let it sit until soft. Place it in a bowl, add cottage cheese, flour, and baking powder. Knead until you get a soft dough.

Roll out the dough into a layer about half a centimeter thick. Then cut out circles from it. The easiest way is to use a glass or cup.

Mix granulated sugar with vanilla sugar. Dip each dough circle into the sugar and vanilla mixture, but only on one side.

Fold the circle of dough several times so that it forms a little envelope. The mixture of sugar and vanilla should end up inside.

Preheat the oven to 180 degrees. Line a baking sheet with parchment paper. Place the cookies on it and bake for 20 minutes until golden brown.
