
Cottage cheese cookies
Description
It goes perfectly with tea and coffee. Serve these crumbly, tasty cookies with a variety of drinks: tea, coffee, lemonade, warm milk, and so on. If you like aromatic baked goods, you can add vanilla sugar or another flavoring to the dough. The dessert is delicious both warm and cold. The baking is ready. Serve at the table.

Prepare the ingredients listed. Choose cottage cheese that is not wet; any fat content is fine. Instead of butter, you may use good-quality margarine, but not spread. Take the butter out in advance so it softens.

Place the cottage cheese in a bowl or salad bowl. If it is not fine, mash it thoroughly with a fork into a puree-like consistency. Add the chicken egg, sugar, and salt to the same bowl. Mix everything well together with the butter.

Fold top-grade wheat flour into the mixture, reserving a little flour for rolling out the dough.

Knead the dough thoroughly and gather it into a ball. Cover with plastic wrap and refrigerate for 20–30 minutes so it firms up slightly.

Then dust the work surface with flour and divide the dough in half. Roll out part of it and cut circles from it with a glass, remembering to dip the rim of the glass in flour.

Fold each circle in half, then in half again, and pinch the tail so the cookies do not open up while baking.

Coat the top of the piece in granulated sugar only — not the bottom!

Place the portions on a baking sheet lined with a silicone mat or parchment paper. Preheat the oven to 180°C and bake the cookies for about 15–20 minutes.
