
Gluten-free cottage cheese cookies
Description
The recipe won’t take long. For the cookie base we’ll use rice flour, and we’ll also add a banana, so you won’t need sugar in the recipe. To make the cookies more colorful and interesting, we’ll add sunflower seeds and a little raisins. If you roll the dough thin, you’ll get crisp cookies; this time I wanted them puffier, so I didn’t roll it out. You can serve the cookies with tea or coffee. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Transfer the cottage cheese to a bowl.

Peel the banana and put it in a blender; blend to a purée and add it to a bowl with the cottage cheese. Crack one chicken egg into the mixture and beat it in.

Mix everything together and add sunflower seeds and raisins. You can also add different kinds of seeds and nuts.

Add rice flour to all the ingredients. Mix, then add baking soda.

Gather the dough into a ball.

Line a baking sheet with parchment paper and brush it lightly with oil or butter. Form small shaped pieces from the dough. Arrange the pieces on the baking sheet; if you like, sprinkle with sesame seeds.

Bake the cookies in the oven for 20–25 minutes at 180°C.
