Cottage cheese ice cream
Description
The dish is prepared without unnecessary complications. Unlike regular ice cream, this version is much healthier and less caloric, even though it contains butter. If desired, you can add chopped nuts or even dried fruits to the ice cream. If you don't have molds, you can pour the ice cream into a container and then place it in the freezer. Stir the ice cream every 30 minutes until it reaches the desired consistency. Instead of dark chocolate for glaze, you can use bitter or white chocolate, or coat the ice cream with coconut flakes or freeze-dried berries. The finished dessert can be served immediately.
Instructions
- 1
Step 1

Prepare all the necessary ingredients for making cottage cheese ice cream. Take the butter out of the refrigerator in advance so it becomes soft. If the chocolate is in a large piece, chop it finely or grate it on a coarse grater.
- 2
Step 2

Pass the cottage cheese twice through a fine sieve or blend with an immersion blender until smooth.
- 3
Step 3

Soft butter mix with powdered sugar and beat with a mixer until fluffy and white. This will take about 5 minutes.
- 4
Step 4

Combine the cottage cheese with the butter and beat until smooth and fluffy.
- 5
Step 5

Add chocolate to the cottage cheese mixture and mix.
- 6
Step 6

Place the cottage cheese mixture into silicone ice cream molds and insert sticks. Refrigerate the molds for one hour, then freeze for 30 minutes.

Step 7

Break the dark chocolate into small pieces and place them into a tall glass that can easily accommodate the ice cream. Pour the butter over the chocolate and melt in the microwave using the pulse mode, stirring until smooth. Dip each ice cream into the chocolate, tap the glass's edge to remove excess chocolate, and place onto a tray lined with plastic wrap. The chocolate will set quickly, so decorate the ice cream immediately. Refrigerate for 10 minutes, then serve.
