
Cottage cheese and berry dessert
Description
I'd like to point out right away that you can use absolutely any berries available for this simple cottage cheese and berry dessert recipe. Depending on which berries you choose, adjust the amount of sugar to taste. If you prefer less sweet desserts, you can omit sugar entirely. 1. Rub the cottage cheese through a sieve to remove lumps. Alternatively, you can place it in a blender and process until smooth. 2. Add mascarpone to the bowl with cottage cheese. Optionally, sweeten with sugar or honey to taste. 3. For extra flavor, add a little vanilla extract. Beat everything thoroughly until smooth and homogeneous. 4. Wash and dry the berries—in this case, raspberries. Set aside some berries for garnish, and blend the rest or pass through a sieve to make a purée. Add sugar to the berry purée if the berries are too tart. 5. Prepare a serving dish. Place half of the cheese mixture on the bottom, drizzle with berry syrup. Add the remaining cheese mixture on top, then drizzle again with syrup. 6. Decorate the cottage cheese and berry dessert with whole raspberries, chocolate drops, or a mint leaf, for example.
