Cottage cheese and berry souffle

Description

You can prepare cottage cheese and berry soufflé any time of the year, as you can use any fresh or frozen berries for it. Dried fruits, nuts, chocolate, condensed milk, and other ingredients can also be used as fillings for this dessert. Adjust the amount of sugar to your taste. Moreover, you'll need more sugar for sour berries and less for sweet ones. The cottage cheese and berry soufflé turns out very tender. If you want it to be thicker, add more gelatin.

    1. Pour cold milk over the gelatin and let it sit for about five minutes to bloom. Place the saucepan with the milk-gelatin mixture over low heat and warm, stirring, until the gelatin is completely dissolved. Make sure the mixture does not boil! Set aside to cool.

    2. In a small bowl, combine the cottage cheese with sour cream and sugar. If desired, you can replace the sugar with honey or fructose. Blend the mixture until smooth using a blender.

    3. Pour the milk with gelatin into the resulting cottage cheese-sour cream mixture, and blend thoroughly once again using a blender. Add the berries and stir the mixture with a spoon.

    4. Distribute the soufflé into molds and refrigerate for at least 2–3 hours (or overnight) to set.
