
Cottage Cheese and Pumpkin Casserole

Prepare all the necessary ingredients. It's best to use sweet varieties of pumpkin.

Wash the pumpkin, peel off the skin and remove the seeds. Measure the required amount of flesh and cut it into pieces. Pour water over 300 g of pumpkin for the casserole and bring to a boil, then cook for about 5 minutes after it starts boiling.

Add eggs, sugar, sour cream, starch, and salt to the cottage cheese.

Stir with a spoon so that the starch doesn’t disperse, and blend the mixture with an immersion blender until smooth.

Drain the cooked pumpkin of water and let it cool to a warm temperature. Add the eggs, sugar, starch, and salt.

Mix and blend with an immersion blender. For the top layer of the casserole, pour out 0.5 cup of the mixture.

Line a 24 cm pan with parchment paper on the bottom. Grease the paper and the sides with vegetable oil. Using a tablespoon, layer the casserole: a cottage‑cheese layer, a pumpkin layer, and so on. If the cottage‑cheese layer spreads poorly, do the same around the edges of the pan.

Preheat the oven in advance. Bake for 20 minutes at 180 degrees.

After 20 minutes, remove and pour the set‑aside pumpkin mixture over it. Smooth with a spoon. Bake for another 40–50 minutes.

While the casserole is cooking, attend to the sauce. In a small saucepan, combine 100 g of pumpkin flesh, sugar, and water. Simmer over low heat, stirring until the sauce begins to thicken.

Then blend with a blender and pour into a sauce dish. Let it cool in the refrigerator.

Casserole is ready! It should be golden brown. When you take it out of the oven, the casserole may sink a little. Let it cool in the dish until warm. Then loosen the edges and turn it onto a plate. Remove the paper and it can be served with chilled sauce.
