
Poppy Seed and Cottage Cheese Cake
Description
Delicious baked treat for the whole family. We'll be making this cottage cheese-poppy seed pie using shortcrust pastry, similar to that used for the "Krashka" pie. The filling will consist of poppy seeds and medium-fat cottage cheese. To prepare the cottage cheese-poppy seed pie, you'll also need one small egg, a bit of semolina, and milk to cook the poppy seeds. Thanks to the cottage cheese and poppy seeds cooked in milk, the pie turns out moist. Serve it warm or chilled—perfect with tea.

First, grind the oat flakes in a blender until they turn into crumbs.

Transfer this crumb mixture to a bowl and sift the flour into it.

Then add 80 grams of sugar. Mix well.

Then add the softened butter and rub everything together into coarse, dense crumbs, as shown in the photo.

Line a baking pan with parchment paper, grease it with vegetable oil. Then evenly press two-thirds of the crumbs into the pan and place it in the refrigerator.

Beat the egg into the cottage cheese and blend everything with a blender until smooth.

Pour milk into the semolina, add poppy seeds, sugar (the remaining 100 grams), place over low heat, stirring constantly, and bring the mixture to a thick consistency. Then let it steep for another 10 minutes.

Mix the thick poppy seed mixture with the cottage cheese. Take the dough form out of the refrigerator and place the filling on top.

Sprinkle with the remaining dough crumbs. Bake for an hour in a preheated oven at 180°C.

You can decorate the finished cottage cheese-poppy seed pie with a mint leaf, nuts, or berries. This is what it looks like when sliced.
