Take two ripe lemons and wash them thoroughly under water. It's best to use a clean cloth or sponge for this. Grate the thin yellow layer of the peel using a grater. Be careful not to grate too deeply, as the pale part beneath the yellow peel is not zest and will impart a bitter taste to the pie.

Mix the soft butter with sugar. When the mixture becomes smooth, add milk, eggs, lemon zest, white sugar, vanilla sugar, and salt. Mix until you get a smooth, thick consistency—using a mixer works best. Gradually incorporate the flour, sifted through a sieve. Finally, mix the cottage cheese into the prepared dough (try to achieve a uniform texture). The thick baking batter is ready!
