
Cottage cheese-cherry plum souffle
Description
The baking is simple and quick. This soufflé is similar to a casserole, but much more delicate due to the addition of thick semolina porridge. This soufflé will perfectly diversify your collection of cottage cheese casseroles. The fresher the chokeberry flour, the stronger the aroma. Grease the baking dish with butter and coat it with semolina to make it easier to remove the casserole. Serve cooled or slightly warm.

Ingredients.

Bring the milk to a boil, add salt, pour in the semolina, and stir until thickened. Remove from heat and let cool.

Mix the porridge, yolks, sugar, cottage cheese, and chokeberry flour.

Beat the chilled egg whites until stiff peaks form, then gently fold them into the cottage cheese mixture.

Place the mixture into a greased 18x18 pan and smooth it out. Bake at 170°C for about 30–40 minutes, until done. Let cool.
