
Cottage Cheese Casserole with Berries
Description
Cottage cheese casserole is one of my favorite treats from when I was a child. I remember I didn’t say “casserole” yet—I said “zakepanka” instead. I’ve grown up, but little has changed: cottage cheese casserole with berries is still my favorite dessert with tea or coffee. It’s very easy to make, and it turns out so good. The bake is ready. Serve at the table.

Whisk the eggs, cottage cheese, and sugar until smooth. You should end up with a light, fluffy mixture.

Add the yogurt and vanilla essence to the mixture and whisk well; then add the flour and whisk again until the batter is smooth and even.

Add fresh berries straight into the mixture—I used raspberries, but you can use any kind you like. Mix gently.

Lightly grease the baking moulds or tins—individual portion-sized ones work best—with butter, then spoon the mixture into them. Bake in an oven preheated to 190° for 40 minutes.

That’s all there is to it :) The berry cottage cheese bake is ready! It’s best served warm, garnished with fresh berries.
