
Cottage cheese casserole with semolina and raisins

The recipe won't take much time. Cottage cheese casserole is an excellent dish for both breakfast and dinner. It's tasty and healthy. A piece of golden casserole can be packed for kids' school or taken to work as a snack. Making the casserole isn't that difficult—experienced cooks prepare it by instinct, while beginners may face minor challenges. After all, cottage cheese varies—it can be drier or contain more whey, have coarse curds or be smooth. But don't worry, the casserole will turn out great anyway. Serve it cooled or slightly warm.

The amount of raisins depends entirely on your preferences. If you like raisins in baked goods, add more. Pour boiling water over the raisins and let them soak for about 15 minutes.

My cottage cheese is homemade, with large grains, so it needs to be passed through a sieve or simply mashed with a potato masher.

Add to the cottage cheese 3 tablespoons of semolina, 2 tablespoons of sour cream, regular sugar, and vanilla sugar. If your cottage cheese is dry, add one extra tablespoon of sour cream.

Thoroughly mix and set aside the cottage cheese mixture for 20–30 minutes, allowing the semolina to swell.

Drain the water from the raisins, gently squeeze them, and add to the cottage cheese mixture.

Grease the baking pan with butter and sprinkle with semolina.
