
Lemon cottage cheese casserole
Description
The baking is simple and quick. If someone in your family doesn't like cottage cheese, you have one solution: make fried cheese pancakes or bake casseroles. This recipe is ready. Serve at the table.

Rub soft butter with sugar.

Grate the lemon zest and squeeze the juice (we need 2 tablespoons of juice). You can chop the lemon pulp and add it to the casserole, or you can omit it.

Add the zest and lemon juice to the butter. And the pulp too, if you decided to bake the casserole with it.

And beat everything with a mixer for 2-3 minutes at high speed.

Reduce the mixer speed and gradually add the semolina. Beat and mix until smooth.

For our casserole, it's better to pass the cottage cheese through a sieve; this way, the casserole will be light and airy.
