
Cottage cheese casserole with lingonberries
Description
Delicious baked treat for the whole family. It is best to use smooth cottage cheese, or blend it so the casserole is more tender. Cottage cheese casserole can also be made with frozen lingonberries. Add them without thawing, after mixing with starch. Then the casserole will not become runny during baking. You can add more sugar if you like sweets. Serve with tea or coffee.

Prepare all the necessary ingredients for making cottage cheese casserole with lingonberries. Sort the berries, rinse them, and dry them completely.

Separate the eggs into whites and yolks. Put the cottage cheese in a bowl and add the yolks; we will need the whites later.

Add sugar to the bowl with the cottage cheese.

Add semolina to the bowl with the egg yolks, cottage cheese, and sugar. Mix everything thoroughly.

Add lingonberries to the bowl with the curd mixture and mix everything well.

Add a pinch of salt to the egg whites and beat until stiff peaks form. Add to the bowl with the cottage cheese mixture and berries. Gently fold everything together from the edges toward the center.

Grease a baking dish with vegetable oil and transfer the curd mixture into it, then smooth it out.

Place in a preheated oven and bake for 40–45 minutes, until done. Remove from the oven and let cool. Dust with powdered sugar and serve.
