
Cheese-filled pastry from shortcrust dough
Description
The pastry is simple and quick to prepare. To make a curd tart with shortcrust pastry, I recommend using good-quality butter (83-85% fat content). You can, of course, substitute it with margarine, but the result will be slightly different. By the way, if you use fatty cottage cheese, one egg will be enough. You can also make this curd tart without cherries—it's still very delicious.

Preheat the oven and let it heat up to 180 degrees. Cut the soft butter into cubes. Add flour, sugar, and baking soda.

Rub the dough with your hands into crumbs; the shortcrust pastry is ready.

Mix the cottage cheese with eggs and cherries. If the cherries are sour and the cottage cheese is unsweetened, add sugar to taste.

Line the baking pan with parchment paper, place half of the dough in it, and smooth it out.
