Cottage cheese pizza
Description
Perfectly pairs with tea and coffee. You can vary the filling ingredients to your taste, but keep in mind that the cheese-based dough will taste better if the filling releases juice and soaks into the dough. The dough made with cottage cheese turns out quite elastic and doesn't dry out during baking. And as everyone knows, the dough is the foundation of a delicious pizza. Can be served with tea or coffee.
Instructions

Step 1

To prepare the dough, separate four egg yolks and beat them with a fork, adding salt. Then add 6 tablespoons of butter, cottage cheese, and milk to the yolks. Knead the mixture thoroughly to eliminate any lumps in the cottage cheese; a blender may be used for this. Mix two-thirds of the flour with baking powder and add it to the cottage cheese mixture. Use the remaining flour as needed to achieve a thick, elastic dough.

Step 2

Now prepare the ingredients for the filling. Cut the bell pepper into small slices. Also, cut the salami and pickled cucumbers into not-too-large pieces. Grate the hard cheese on a coarse grater.

Step 3

Roll out the dough with a rolling pin, constantly dusting the pin and work surface with flour. Carefully place the rolled dough into the baking pan. I line the pan with foil and sprinkle it lightly with flour. Spread tomato paste over the dough and sprinkle seasonings on top.

Step 4

Place all the filling ingredients on the dough. I first put the peppers and cucumbers, then sprinkle with grated cheese. On top, I place the sausage so that it bakes in the oven and releases fat, which will soak into the other ingredients.

Step 5

Preheat the oven to 200 degrees. Bake the pizza for about 25 minutes, until the dough turns golden. You can eat this pizza hot, straight from the oven, or cold.
