
Cheese Easter dessert
Description
The diameter of the Easter mold is 11 cm. If desired, you can prepare the dessert in a larger mold; just remember to double the ingredient quantities and divide them into three unequal parts. Serve the cottage cheese paskha chilled for breakfast—everyone in the family should try this dessert first. Children especially love such a breakfast—they adore anything chocolate

Prepare the listed ingredients. Choose full-fat cottage cheese and chocolate according to your taste.

Mash the cottage cheese with a fork and place it into a cauldron or saucepan with a non-stick bottom. Pour in the 33% cream, add salt and sugar. Optionally, you can add a little vanilla sugar. Add the egg yolks and butter.

Warm over medium heat and stir the mixture until it becomes slightly runny. The key is not to bring it to a boil, so the cream doesn't separate. You can optionally puree the mixture to remove any lumps. However, I personally enjoy my paskha with small curdled cheese lumps.

Grate the chocolate into separate bowls or small dishes. You don't need to melt it—it will mix well with the hot cheese mixture anyway.

Remember that the Easter mold is narrow, so place a quarter of the mixture into the container with white chocolate, slightly more into the container with milk chocolate, and the largest portion into the container with dark chocolate, then mix thoroughly.

Line the Easter mold with a double layer of cheesecloth, letting the fabric ends hang over the sides of the mold. First, add a layer with white chocolate and carefully smooth it out. Next, add a layer with milk chocolate, and finally a layer with dark chocolate. Gently tap the mold against a plate to remove air bubbles. Fold the edges of the cheesecloth inward, place a small weight on top, and refrigerate the Easter cake.

After 4-5 hours, the mixture will set perfectly and become firm. Unfold the edges of the cheesecloth and flip the paskha upside down onto a plate. Pull gently on the edges of the cheesecloth—the paskha will easily release onto the plate. Remove the cloth and serve the chilled dessert for breakfast—everyone should try it. Enjoy!
