Since the holiday is just around the corner, it's time to start thinking about what we'll prepare for the festive table. Today, I'd like to share with you how to make cottage cheese paskha with sesame seeds, because such a wonderful dish is a must for this joyful day. As you've probably noticed, the preparation method here is classic, but we'll add something new—namely, sesame seeds. Thanks to this small addition, our paskha will become even more delicious, and the crunchy sesame seeds will lift our spirits. So let's welcome the holiday fully prepared with this wonderful recipe for cottage cheese paskha with sesame. 1) Of course, you must use only the freshest cottage cheese. To make the paskha tender and airy, pass the cheese through a meat grinder several times. 2) Next, toast the sesame seeds in a dry skillet over medium heat until golden brown. Transfer them to a bowl with the cottage cheese and mix well. 3) Place butter into a saucepan and soften it over low heat. Add the cottage cheese mixture with sesame, mix well, then add sour cream and previously soaked raisins. Stir thoroughly. Break 4 eggs into the mixture, add sugar, mix again, and place the saucepan over low heat. Constantly stirring, bring the mixture to a boil, then remove from heat. Cool it down by placing the saucepan into a container filled with cold water. 4) Line a colander with a damp cheesecloth, carefully transfer the cooled mixture into it, cover the top with the edges of the cloth, and place a weight on top. Refrigerate for 12 hours. 5) Remove the finished paskha from the colander, take off the cheesecloth, and serve. Enjoy your meal!
