
No-bake cottage cheese Easter dessert

The recipe won't take much time. A delicious, aromatic, and very healthy festive dessert—cottage cheese paskha. There are many recipes for making it, but I suggest you try one of the simplest ones. This no-bake cottage cheese paskha is quick and easy to prepare. You can make this paskha with raisins, candied fruits, and nuts, or use these ingredients just for decoration. Shall we start cooking? For Easter, we need fatty but not wet cottage cheese. Sift it through a sieve. Alternatively, grind it twice through a meat grinder with a fine plate.

Mix soft butter with sugar. If you like sweets, add one and a half cups of sugar.

Add sour cream to the butter and sugar mixture, and beat everything with a mixer.

Transfer the cottage cheese and the whipped butter with sour cream to a large container, add vanilla and cardamom. Beat until smooth. If you wish to add raisins and candied fruits to the paskha, now is the time to do so.

Now it's time to place everything into a mold for paskha. If you don't have one, line a colander with cheesecloth folded in two layers, and place the colander into a deep bowl (to catch the draining whey). Put the curd mixture into the colander.

Spread out the cottage cheese mixture evenly and cover it with the edges of the cheesecloth. Place a plate on top, then put a weight on the plate. Refrigerate the dish for at least 12 hours, or up to 24 hours.

Then remove the gauze and transfer the paskha onto a serving plate. Decorate with raisins, candied fruits, nuts, chocolate - according to your taste.
