
Cottage cheese from milk and lemon
Description
The recipe won't take much time. The homemade cottage cheese turns out soft, tender in taste, and extremely nutritious. If you prefer a lower-fat product, buy low-fat milk at the store. Serve chilled.

Prepare the listed ingredients. If possible, buy farm (homemade) milk, as it has a higher fat content.

Pour the milk into a cauldron or a saucepan with a non-stick bottom and place the container on the stove. Bring the milk to a boil, making sure the foam does not overflow the edges of the container.

Then mix the milk, turn off the heat, and let it cool slightly for about 20 minutes. Squeeze the juice from half a lemon and pour it into the container.

Set the heat to the lowest setting so the milk does not boil. Heat it for 5–6 minutes, then turn off the heat and stir the contents of the container. Let it sit undisturbed for 5–10 minutes, during which the milk will curdle.

Strain the entire mixture through a fine sieve or a double layer of cheesecloth. To obtain dry curd, let it drain for 1–2 hours. During this time, the excess whey will drain off.

Place the delicious cottage cheese in a bowl or on a small plate and serve with berries and fruits. The yellowish color of the product comes from fat, which is abundant in farm milk.
