
Homemade Cottage Cheese
Description
To make cottage cheese, you won't need any special equipment. You only need a food thermometer. Everything can easily be done at home. This cottage cheese can be used for baking—for example, for "Goose Feet" cookies or for cheesecake—or you can simply eat it with fruit and sour cream. Store the cottage cheese in the refrigerator, just like regular store-bought

Pour the milk into a saucepan and warm it over medium heat to 48-49 degrees; do not overheat or bring it to a boil.

Remove the pot from the heat and immediately pour in the vinegar, stirring for 1–2 minutes, then cover with a lid and let stand for 30 minutes.

Line a colander or fine-mesh sieve with cheesecloth folded into several layers, and after 30 minutes, pour the mixture into a colander.

Let drain for 5-7 hours, then lift the cheesecloth and rinse the cottage cheese under cold water.

Squeeze the contents of the cheesecloth with your hands to remove excess liquid.

Transfer the cottage cheese to a bowl and add salt; mix well to break up large lumps.
