1. In a small saucepan, mix the cottage cheese with milk and cook until it boils (or until the whey separates). This took me about 10 minutes.

2. Line a colander with a double layer of cheesecloth, pour the mixture into it to separate the whey from the curd cheese. Then gather the cheesecloth together and press the curd cheese with a spoon or spatula to remove the remaining liquid.

3. Mix the eggs with salt and baking soda, stir with a fork.

4. Put the butter in a saucepan, add the cottage cheese. Place over heat and stir constantly until the butter melts.

5. Add the egg mixture, reduce the heat, and stir the mixture with a wooden spoon for 10 minutes. The result should be a thick mixture that sets quickly. Transfer the mixture to a tray or mold lined with parchment paper and let it cool.
