
Tuvan flatbread

A Tuvan flatbread (gorgozha in the local language) is thin, flat bread made from flour and water, 20–30 cm in diameter. Tuvans serve these flatbreads not only with soups, stews, or tea but also use them as a base for many dishes. I recommend trying this tasty, budget-friendly baked good, which has become part of the rich and fascinating culture of Tuva. Serve cooled or slightly warm.

Prepare all the ingredients according to the list.

In a deep bowl, combine water and salt.

Then add the baking soda and gradually incorporate the flour.

You may need slightly more or less flour than the recipe calls for. First stir the dough with a spoon, then finish kneading by hand.

The dough should be soft, elastic, and not sticky on your hands. Cover the bowl with a towel and let the dough rest for 20 minutes.

Dust the work surface with flour and roll out each piece of dough into a circle no more than 0.5 cm thick. In the center, make 2–3 slashes with a knife.

Heat a kazan or a thick-bottomed skillet well with plenty of oil. Add the flatbreads one at a time and fry on both sides until golden brown.

The heat should be no lower than medium. Place the finished flatbreads on paper towels first to blot off excess oil, then transfer them to a plate.
