
Tutmanik on kefir
Description
Homemade pastry for tea. Tutmanik is a cheese pie from Bulgarian cuisine, though similar pastries are made in other countries as well. Greek tiropita or Georgian khachapuri are quite similar, but tutmanik has its own special feature: the classic filling is brined cheese, such as feta. This cheese has a distinct, slightly salty flavor, while the neutral yeast dough balances the overall taste of the pie. Tutmanik also has a beautiful spiral shape—no wonder it's considered a festive pie in Bulgaria, despite being simple to prepare. Today I'll share the recipe.

Step 1
Sift the flour, add kefir, vegetable oil, water, salt, sugar, and yeast. Mix well, knead a soft dough, cover with a towel, and place in a warm spot.

Divide the dough into 3 parts and roll each part into a 30x25 cm rectangle. Brush each rectangle with melted butter and evenly spread 1/3 of the finely grated feta cheese on each.

Roll the dough into a log and cut it into several equal pieces. Do the same with the remaining portions of dough.

Place pieces of dough into a round baking pan, cut side up. Arrange the dough not too tightly and let it rest for about 15 minutes.

Brush the pie with beaten egg yolk. Place the pie in a preheated oven at 180 degrees for 25-30 minutes.
