
Tutmanik
Description
The recipe won't take much time. Today I want to share with you a classic recipe for tutmanik, a delicious pie that's perfect for any celebration. I first tried this dish at a restaurant in Sofia, and I liked it so much that I decided to find out the recipe and start making it at home, as it turns out to be quite simple. As you've probably already noticed, feta cheese is used as the filling in this pie, so I'd like to warn you in advance that it will turn out slightly salty. Otherwise, the pie is simply amazing and also very, very beautiful, so there's no shame in serving it to your honored guests. And if you, like me, are a fan of Bulgarian cuisine, or simply love pies, then I'll gladly tell you... The pastry is ready. Serve at the table.

Dissolve the yeast in warm milk, add sugar and 2 tablespoons of flour, mix, cover with plastic wrap, and let stand for 10 minutes. In a separate bowl, crack 2 eggs and beat them with a whisk.

Add sour cream to the beaten eggs and beat everything again.

Into this mixture, pour half of the vegetable oil and add the yeast.

Next, gradually add the flour and begin kneading the dough. This must be done very thoroughly, as it determines the taste of our pie.

Brush the finished dough lightly with vegetable oil, cover with plastic wrap, and let it sit in a warm place for half an hour. Then, we need to gently knead it again and set it back in a warm place for another 30–40 minutes.

Now we melt the butter in a double boiler and mix it with the remaining vegetable oil, then grease the working surface with the prepared mixture.

Separate a small piece of dough for decorating the tutmanik, and place the remaining dough on a greased surface, pour the leftover oil over it, and carefully stretch it by hand into a thin layer about 1 centimeter wide.

We sprinkle this layer with feta cheese grated on a coarse grater, leaving 2 centimeters from the edges.

And roll it up into a roll.

Now cut this roll into small pieces about 2-3 centimeters wide.

Grease the baking dish with oil and place the pieces of roll into it.

Add a little more flour to the remaining piece of dough, roll it out and shape it into a braid - this will be our decoration.

Place the braid into a pie pan, cover the pan with plastic wrap, and let it sit in a warm place for 15 minutes.

After the time has elapsed, we need to brush the tutmanik with beaten egg yolk.

And place it in a preheated oven at 180 degrees for half an hour.

You can eat the finished pie cold, but it's especially delicious while warm. Enjoy your meal, everyone!
