Description
The dish is prepared without unnecessary complications. Making tushpara at home involves 4 steps: 1. Preparing the filling. 2. Kneading the dough. 3. Wrapping the meat in dough. 4. Boiling the tushpara. The finished dish can be served at the table.

We wash the meat and cut it into small pieces, and do the same with the tail fat.

We wash the onion, peel it, and slice it into half-rings.

Pass the meat, fat, and onion through a meat grinder one after another. Mix, add salt and pepper, then mix again.

Break two eggs into the flour.

Add water, salt, and start kneading. Knead the dough until it becomes smooth and pliable.

Let the dough rest for 40 minutes, covering it with a towel. After that, roll it out and cut into small squares.

Place the filling onto pieces of dough.

We make tushpara. Connect the opposite corners.

With fingers, finish the wrapping.

Now bring together the folded corners of the triangle.

Drop the tushpara into boiling water and cook over medium heat for 5–7 minutes. Then drain the tushpara in a colander and serve.
