
Braised sea bass
Description
The recipe won't take much time. A delicious and light dish made with sea bass. Since the fish isn't fried, this dish can even be considered diet-friendly. It certainly won't add any extra weight. Vegetables and fish are low-calorie ingredients, and their combination here is very harmonious. Before serving, you can sprinkle the fish with lime or lemon juice. Clean the fish of scales and innards, cut off the head, tail, and fins. Rinse the fish thoroughly.

Pour vegetable oil and a couple of tablespoons of water into a frying pan. Season the fish with spices and salt, place it in the pan. Set over low heat (below medium), cover with a lid, and simmer for about 20 minutes.

Peel the onion and slice it thinly into half-rings. Add the onion to the pan with the fish, sprinkle the fish with chopped dill. Simmer for another 5–7 minutes.

Now add the asparagus beans and season lightly with salt. Simmer for about 5 minutes uncovered, then cover the pan again and cook for another 15 minutes. By this time, all the liquid should have evaporated, and the monkfish may even brown slightly.
