
Rabbit stewed in a multicooker
Description
The recipe won't take much time. Rabbit and wine are a perfect combination. To prepare stewed rabbit in a "Redmond" multicooker for 3-4 servings, you'll need two medium-fat rabbit legs and two glasses of dry red wine (Cabernet or Merlot). In my opinion, vegetables go best with rabbit. Therefore, I suggest preparing carrots baked in the oven as a side dish. You can marinate them in soy sauce. Serve hot.

Prepare all the ingredients.

Prepare the marinade for the rabbit: combine wine, cinnamon, two tablespoons of olive oil, bay leaf, and your favorite spices. Coarsely chop the onion into quarters and add it to the marinade, along with sliced garlic. Marinate the rabbit in this mixture for about an hour (or longer). Then, lightly pat the meat dry with paper towels and sear it over high heat (for a couple of minutes) in olive oil.

Place the fried rabbit into the multicooker, add the pickled onion and half of the remaining marinade. Set the "Stewing" mode for 30 minutes or 40 minutes.

While the rabbit is stewing in the multicooker, prepare the carrots. Wash them thoroughly; if the carrots are young, you don't even need to peel them. Mix Dijon mustard, soy sauce, minced garlic (optional), and a blend of mixed spices. Coat the carrots with this mixture and bake in the oven at 190°C until golden and tender—about 15–20 minutes. Alternatively, you can grill the carrots (or choose other vegetables).

You can reheat the marinade left from the rabbit in a pan, even bringing it to a slight boil. It won't spoil, and you can use it to pour over the meat before serving.
