
Braised Rabbit
Description

So this recipe is an excellent choice for those who watch their figure. This meat pairs wonderfully with rosemary, so feel free to add a bit of rosemary seasoning to the finished sauce and garnish the dish with a fresh sprig when serving. The ready dish can now be served.

Rinse the meat pieces and coat them with mustard.

Fry the bacon slices in a deep frying pan without adding oil, rendering out some of the fat. Remove from the pan.

Place the rabbit meat into the same skillet and lightly sear until golden brown on all sides. Add the finely chopped onion and simmer, covered, for another 5 minutes. Pour in the broth and wine.

Add the carrots and bacon, season with salt and pepper to taste. Cover with a lid and simmer over low heat for 30 minutes.

Wash and slice the mushrooms, then lightly sauté (of course, in another pan) in butter.

Remove the meat from the pan, increase the heat, and let the sauce reduce (about 10 minutes). Pour in the cream and let it simmer for another 5 minutes.
