
Stewed carp
Description
This hot dish is not very difficult to prepare, but it will take quite a lot of time to cook, in order for the carp to become very tender. I think you won't regret trying it. You'll also need a heavy-bottomed pot or a cauldron.

Clean the fish if necessary. Rinse its fillet and cut into medium-sized pieces. Do not chop finely.

Wash and peel the carrots, beets, and onion. Do not discard the onion skins—set them aside. Slice the vegetables into rings. Start layering half of the sliced vegetables in a pot: carrots, beets, and onion.

Then add the fish, another layer of vegetables, and on top — the husks. They will give the dish a golden color and enrich it with iodine. Pour in water, add all the seasonings, spices, salt, and sugar. Add a little oil.

Bring the dish to a boil over high heat. Then simmer covered over low heat for 3 hours. Serve the fish in any desired way.
