
Stewed lungs
Description
This unusual meat dish is very filling, aromatic, and undoubtedly incredibly delicious on its own. In some ways, it resembles beef stroganoff. Only this one requires a bit more effort. But I assure you, it's worth it. Give it a try.

Step 1

Prepare all the necessary ingredients. Pour light water over it and let it sit for 2 hours. To prevent the lung from floating, cover the container with a plate, and you can place a small weight on top.

After this time, remove the lungs from the water, rinse under running water, cut into pieces convenient for your pot, and place them to boil for at least 1 hour.

We now peel the boiled lung, removing any remaining unwanted membranes, blood vessels, and other inedible bits. Cut it into thin strips.

We slice the onion quite thinly into half-rings or quarter-rings, place it into a saucepan heated with butter (you can also use a deep, heavy skillet) and sauté for several minutes until it turns slightly golden.

When this happens, add the slices of liver and a little more butter. Fry, stirring, until browned and golden.

Place the sour cream into a small container, add tomato paste, salt, and spices (you can use dried herbs, but that's up to your preference). Mix well.

Pour the resulting dressing over the meat. Add bay leaf and whole peppercorns. If needed, add a little more salt (adjust according to your taste). Reduce the heat, cover the dish with a lid, and simmer for about 15 minutes. Serve the dish hot!
