
Lancaster-style stewed meat

Very tasty Lancaster-style stew has many advantages—it's very easy to prepare, highly nutritious, warming, and perfect for your winter menu. The ingredients are very simple: you'll only need lamb, potatoes, onions, and cumin. Serve hot.

1. Preheat the oven to 160 degrees Celsius. Remove all excess fat from the lamb, peel and thinly slice the potatoes and onions.

2. Grease the pot with oil. Place a layer of potatoes on the bottom of the pot and sprinkle with half of the chopped onion, as well as the spices.

3. Place the lamb in a single layer on top, sprinkle with cumin, and season to taste. Add another layer of potatoes, the remaining onions, and sprinkle with spices.

4. Place another layer of thinly sliced potatoes, overlapping them. Pour in the lamb or chicken broth and spread half of the butter over the potatoes. Cover tightly with a lid and bake in the oven at 180 degrees Celsius for two hours.

5. Remove the lid and increase the temperature to 220 degrees Celsius, brush the potatoes with the remaining butter and return to the oven. Cook for another 30 minutes, until the top is golden brown. If you wish to speed up the process, place the dish under the grill.
