Braised chicken with vegetables in a multicooker

Description

Essentially, this is a simplified version of the popular Mexican dish called "Fajitas." The multicooker greatly simplifies the cooking process and reduces preparation time, while keeping the vegetables and chicken more nutritious and juicy. This recipe serves a large group, so there will be leftovers for tomorrow too.

    1. Place the coarsely chopped tomatoes into the bottom of the multicooker pot (reserve a few tomatoes). Wash and slice all the peppers into strips, adding them to the pot as well (reserve a couple of pieces). Peel the fennel and onion, slice into half-rings, and mix everything together.

    2. Peel the garlic, cut into small pieces, and add to the bowl.

    3. Wash the chicken fillet, dry it with paper towels, and place it whole into the multicooker.

    4. In a bowl, mix chili powder, ground cumin, paprika, coriander, salt, and black pepper. Rub the spice mixture onto the chicken fillet.

    5. Finely chop the previously set aside tomatoes and peppers, mix them together, and spread over the fillet. Close the multicooker lid, set to the "Stewing" mode, and set the time for 2 hours.

    6. Open the lid, remove the chicken, slice it into strips, and return it to the multicooker, mixing well. Drain 1 cup of the liquid that has formed. In a bowl, mix lime juice and honey, season to taste with salt and pepper, then pour into the pot. Close the lid and let the dish sit for 15 minutes.
