
Braised cabbage with pumpkin
Description
What could be simpler than preparing stewed cabbage?! And yet, this very simple dish can become, if not a culinary masterpiece, then certainly a wonderful side dish for poultry, meat, or fish. Pumpkin adds an incomparable sweet note to the cabbage, onion, and carrots. Garlic contributes aroma and a slight spiciness. As seasonings, I used only bay leaf, but you could also add dried basil, oregano, or a blend of Italian or French herbs.

Peel the onion and garlic, wash and finely chop. Place in a frying pan.

Pour in the sunflower oil and simmer for 5-6 minutes, stirring.

Peel the carrots, wash them, and grate using a grater— I used a Korean carrot grater. Add to the pan with the onion and garlic.

Peel the pumpkin, wash it, and cut into small cubes. Place in a frying pan. Simmer with onion, garlic, and carrot for 5-7 minutes.

Slice the cabbage thinly and add it to the skillet with the other vegetables. Season with salt to taste, add water, cover with a lid, and simmer the vegetables until almost done over medium-low heat, stirring occasionally.

When the dish is almost ready, add tomato paste and bay leaf, mix well. Simmer for another 5-6 minutes, then turn off the heat.
