Meat and vegetables are a classic culinary combination. This recipe includes both the main dish and a side. It's simple to prepare and turns out juicy and delicious. You can cook the "hedgehogs" without rice first, then cover them with a layer of uncooked rice. I used regular long-grain rice, but if possible, use basmati. It makes the "hedgehogs" look more unusual, although the taste remains unchanged. You can use any ground meat, but a mixed variety is preferable for better flavor.

Prepare all the ingredients.

Shred the cabbage.

Salt and knead with your hands to make it softer. Add grated carrots, diced onion, and mix everything together.

I will cook it in a multicooker, but you can also prepare this dish on the stovetop in any pot with a thick bottom. Pour in the oil, add the cabbage with vegetables, and simmer until tender.

Meanwhile, cut the crusts off the bun and soak the crumb in milk.

Rinse the rice well.

In a deep bowl, combine the ground meat, minced garlic, finely diced onion, bread roll squeezed dry from milk, and 3 tablespoons of rice. Season with salt and pepper to taste, and mix well.

Shape the minced meat into balls of the desired size and roll them in the remaining rice on all sides.

As soon as the cabbage becomes softer and releases its juice, add tomato paste, sugar, salt to taste, and about 1 cup of hot water.

Place the prepared meatballs on top. Cook on "Simmer" mode or over low heat (if cooking on gas) for about 1.5 hours. I check doneness by the readiness of the rice. During cooking, you can take a look occasionally and, if necessary, add a little water.
