Russian-style Stewed Cabbage

Description

This appetizer is quick and easy to prepare. You can braise cabbage using this recipe whether it’s young or old. Older cabbage needs a bit more cooking time. Add water more often, since the finished cabbage should be very tender and juicy. It can be served warm or chilled.

    Prepare the ingredients. Peel the onion and carrot, wash them together with the cabbage, and pat dry.

    Cut the onion into half-moons and julienne the carrot into thin strips. Transfer the vegetables to oil heated in a skillet and sauté for a couple of minutes until tender.

    Shred the cabbage, transfer it to a skillet, and sauté for a couple of minutes. Then add a little water, cover the skillet with a lid, and braise over medium heat for 5 to 7 minutes. Older cabbage needs a bit more time, and before adding it to the skillet, it is best to gently massage it with your hands.

    After some time, transfer the tomato paste to a frying pan.

    Dissolve the flour in cold water, pour into a skillet, mix thoroughly, and simmer for 5 more minutes.

    After some time, season the cabbage with salt and pepper to taste. Add a bay leaf to it, add a piece of butter, stir, and taste. If the cabbage has turned a bit tart from the tomato, sprinkle in a little sugar. Simmer for another 5 minutes, then turn off the heat and let the cabbage rest under the lid for about 10 minutes.
