
Braised beef with eggplants and zucchini
Description
The recipe won't take much time. Beef goes very well with any vegetables and greens. It's not only tasty but also highly nutritious, and combined with vegetables, it's easily digested by the body. The dish turns out to be filling and nourishing; it can be served on its own or with a neutral side dish (for example, rice or potatoes). I cook it in a multicooker, which can be replaced with a saucepan or a pot with thick walls. 1. Rinse the beef and cut it into cubes. Place the multicooker bowl into the appliance, set it to the "Stewing" mode, add the butter, then add the meat pieces and sear them. 2. Peel and rinse the onion and carrot. Dice the onion, grate the carrot, and finely grate the garlic. Add the vegetables to the meat. 3. Rinse and clean the bell pepper, cut it into pieces. Rinse the zucchini and eggplants and cut them into cubes. Add the vegetables to the bowl, season with salt and pepper to taste, and mix. 4. Rinse the tomatoes, peel off their skins, cut them into medium-sized pieces, and add them to the bowl. 5. Add salt, pepper, and paprika to taste. Cook with the lid closed for about 20 minutes. 6. At the very end, open the lid and add finely chopped parsley, mix and turn off the appliance. 7. Serve the beef with vegetables hot. Enjoy while hot.
