
Beef stewed in apricot juice
Description
The dish is prepared without unnecessary complications. The piece of beef should be cleaned of tendons and membranes, leaving only the meat. It will cook for 3 hours in a cast-iron pot or 8 hours in a slow cooker. Use your favorite spices, salt, and ground black pepper. From the vegetable set, you'll need onion, carrot, and celery (if you like it); I don't always add celery. Try it. The finished dish can be served at the table.

1. Prepare the ingredients, wash the meat, and remove the films and tendons. Peel the vegetables. For spices, I use Provence herbs and crushed dried rosemary for beef.

2. Rub the meat with salt, ground pepper, and spices, and let it rest for about 10 minutes. Heat vegetable oil and sear the meat over medium heat, uncovered, on both sides until a crust forms. This helps to retain the juices inside the meat.

3. Chop the vegetables coarsely. Like celery? Add a few stalks and chop them coarsely.

4. Beef can be cooked in two ways: in a slow cooker for 8 hours or in a cast-iron pot for 3 hours. I decided to cook it in a cast-iron pot. Place the piece of meat at the bottom, arrange the vegetables around it. Dissolve the starch in juice or water, whichever is convenient.

5. Pour apricot juice and water over the meat. Close tightly with a lid and simmer over the lowest heat for 3 hours. Add salt if needed at the very end.

6. The meat is ready. Let it rest for about 30 minutes to cool slightly. Then slice into portion pieces and serve with a side dish.
