
Braised trout
Description
The dish is prepared without unnecessary complications. Trout can be cooked in various ways. It's very popular when baked. Many probably don't know how delicious it is when stewed. To prepare stewed trout, we'll need a medium-sized fish, preferably fresh. If you'd like to make the dish spicier, add more chili peppers. And don't be put off by the caramel sauce—the fish turns out exquisite. The ready dish can now be served.

Wash the trout. Gut it. Clean it.

Cut into portion-sized pieces.

Combine half of the water with the sugar, place over high heat, but do not stir or mix. Boil for about 5 minutes. The sugar will begin to turn into caramel—remove from heat when the color becomes golden-brown, being careful not to burn it.

Then add the remaining water, fish sauce, and salt. Return to the heat, reducing it to medium. Slice the onion into rings and add to the caramel sauce.

Then add the fish and the remaining ingredients: slice the chili into strips, mince the ginger, and add the spices. Cover with a lid, leaving it slightly ajar, and simmer over medium heat for about 15–20 minutes. Then flip the pieces and simmer for another 20 minutes, reducing the heat slightly.

You can serve the ready stewed trout with vegetables or rice.
