
Turkish Delight
Description
Rahat-lokum can be prepared using food coloring or fresh berries (such as raspberry or strawberry). However, in the latter case, the dessert's color will be slightly muted rather than vibrant. As for nuts, they are optional, but they add a special piquancy. Treat yourself and your loved ones to homemade Turkish delights.

1. Put sugar, a glass of water, and lemon juice into a saucepan. Place over heat and bring to a boil.

2. Simmer the syrup a little. It should become not too runny, but should not turn brown.

3. Dissolve a glass of starch in water and mix thoroughly. Pour into the saucepan with syrup, reduce the heat, and simmer, stirring constantly.

4. The base should be cooked for about 1–1.5 hours. When ready, it will easily pull away from the sides of the pot. Divide it into two parts if you want to make two-colored Turkish delight, for example. Add food coloring and mix well.

5. Add part of the nuts and mix again.

6. Add food coloring of another color to the second part of the base. In this case, it's red and green.

7. Again add the nuts and mix everything.

8. Line a convenient baking pan with parchment paper and dust it with starch. Prepare two such pans.

9. Place the prepared base, level it and cover with foil. Leave for 24 hours.

10. Mix the powdered sugar with the starch. Cut the lokum into cubes and roll them in the sugar mixture on all sides. That's it, the Turkish treat is ready.
